Honey is low in water, acidic and rich in sugars, making it difficult for many microbes to grow when sealed well. That is why ancient honey can remain recognisable long after other foods decay. This matters beyond trivia because preservation is chemistry, not magic. The lesson: ordinary sweetness can hide powerful design.
